Brothers Bakery started with a question neither of us could stop asking: what if we just did it right? Not faster. Not cheaper. Right.
Every loaf that comes out of our oven on F Street begins the night before — a 24-hour sourdough fermentation, a fold at dawn, a bake while the rest of Fresno is still figuring out its alarm clock.
We're not a chain. We're not scaling. There are two of us in the kitchen, a few loyal regulars at the counter, and a community that has decided, over the years, that our croissants are worth showing up for.
Flour, water, salt. That's it for the base dough. We let it rest — sometimes overnight — so the gluten develops on its own time, not ours.
A series of folds strengthens the structure. Then the bulk ferment — 18 to 24 hours in the cold. This is where flavor becomes something else entirely.
Each loaf is shaped by hand. Not perfectly. Perfectly enough. Then it proofs slowly, developing those irregular holes that tell you it was treated with patience.
Steam in the oven. A deep, crackling crust. We pull them at 4 a.m., cool them on racks, and have them on the counter before most people wake up.
